I threw this together today because I was in a hurry. It takes about 10 minutes to prep and 45 minutes to bake. Ingredients: 6 pork chops 2 medium sweet potatoes (or vegetable of your choice) 1/2 jar of roasted peppers 1 red onion 1 cup of chicken broth seasonings of your choice (I used Cajun seasoning on this one) Directions: Preheat oven to 350 Put thawed pork chops in a baking pan, pour in chicken broth. Season. Layer with sliced onions, sliced sweet potatoes, and roasted peppers. (You can also add any other vegetable to this.) Season again. Cover with aluminum foil. Cook for 45 minutes.
